Cabbage and Smoked Sausage-Gluten Free

What I love most about this recipe is how easy it is to make. It is a one dish meal that I can put in the oven while I continue with my daily routine. If it is more convenient I can cut everything the night before, place in the fridge and then an hour before supper time,  I just put it in the oven. It is a good dish for those hectic days when I don’t have time to stand over  the stove. My family really loves this recipe. I  have served it with homemade bread, cornbread or with nothing at all.

This recipe is also great grilled using chicken. When grilling be sure to use a foil bag and do not add water.

Cabbage- 1/2 head

Potatoes- 2 medium

Onion-1/2 medium chopped

Carrots-3 large

Gluten Free Sausage-4 cups (may substitute gluten free hot dogs or other meat if needed)

Extra Virgin Olive Oil-1/4 cup

1 cup water

Salt and pepper to taste

Chop all the ingredients to desired size and place in a 9 x 13 baking dish. Drizzle olive oil over the top then add the water. Cover with aluminum foil and bake on 350 for 60 minutes. The dish is ready when a fork can easily be inserted into the veggie’s. Enjoy.

Make it your own by adding your families favorite vegetables or removing the ones you don’t like. The possibilities are endless.
